1. Prepare the Grill
Preheat a grill or grill pan over medium heat. Lightly oil the grill surface if necessary to prevent sticking.
2. Make the Honey Butter Mixture
In a small bowl, combine the melted butter, honey, and cinnamon. Stir well until the mixture is smooth and evenly blended.
3. Coat the Peaches
Brush the cut side of each peach half with the honey-butter mixture. This will help the peaches caramelize and enhance their natural sweetness.
4. Grill the Peaches
Place the peaches on the grill cut-side down. Grill for about 3–4 minutes, or until the peaches become slightly soft and beautiful grill marks appear.
5. Assemble the Dessert
Transfer the grilled peaches to serving bowls with the cut side facing up. Add a generous scoop of vanilla ice cream on top of each peach half.
6. Add the Toppings
Sprinkle toasted pecans over the ice cream for a crunchy texture. If desired, drizzle caramel sauce over the dessert and garnish with fresh mint leaves for a refreshing finish.
