Hearty Bean Soup with Lamb or Beef

• 2 liters of water
• 2–3 pounds lamb shank or beef shank (with bone for extra flavor)
• 2 teaspoons Herbes de Provence or Italian seasoning
• 1 tablespoon extra-virgin olive oil
• 1 cup diced onion (about 1 small onion)
• 1 cup chopped celery (2–3 stalks)
• 2/3 cup chopped carrots (about 1 medium carrot)
• 2–3 garlic cloves, minced
• A few drops of Tabasco sauce (optional)
• Salt and black pepper to taste
• Fresh chopped parsley for garnish
