Preparation
Step 1 – Prepare the Mixture
In a large mixing bowl, combine the mashed potatoes, flour, Parmesan cheese, sour cream, chopped chives, parsley, and a pinch of sea salt.
Mix the ingredients well until everything is evenly combined and forms a soft dough-like mixture.
Next, add the beaten eggs to the bowl and gently mix them into the potato mixture until fully incorporated.
Step 2 – Shape the Puffs
Using your hands or a spoon, shape the mixture into small balls or patties. They should be about the size of a golf ball or slightly smaller.
Place the shaped puffs on a baking sheet lined with parchment paper while you prepare the cooking method.
